It's what runs out of a 'joint' of meat, also known as a 'roast'

as in 'Sunday Roast'

Terribly Cholestriful, but delicious now & again spread on doorsteps of bread.

Now what do you yanquis think about 'Crackling' = or have you never tried it ?
